Erythritol is a type of white crystalline C4 polyol compound with unique advantages such as low calorie content, pure sweetness, and refreshing taste. Compared to sucrose, erythritol has a calorie content of only 0.4 kcal/g, but its sweetness reaches 60-80% of that of sucrose. Erythritol has a sweetness level of 70% to 80% of that of sucrose. It is a natural green product and has the characteristic mild flavor of sugar alcohols. Moreover, its sweetness remains in the mouth for a very short period of time. When mixed with some high-intensity sweeteners such as aspartame and AK, the sweetness and taste are very close to that of sucrose. Crystalline erythritol gives a cooling sensation when consumed. The dissolution heat of erythritol is approximately three times that of glucose and twice that of sorbitol [6].
Erythritol has strong heat resistance. Even at high temperatures, it will not decompose or change color due to heating. When combined with amino acids, it will not undergo the Maillard reaction.
Erythritol has extremely low hygroscopicity and is the lowest among sugar alcohols. At a temperature of 20℃ and a relative humidity of 90%, the increase in weight after 5 days of storage is approximately 40% for sorbitol, 17% for maltitol, 10% for sucrose, and less than 2% for erythritol.
