Malic acid, also known as 2-hydroxybutyric acid, has two stereoisomers due to the presence of an asymmetric carbon atom in its molecule. In nature, it exists in three forms: D-malic acid, L-malic acid, and their mixture DL-malic acid. It is a white crystalline substance or crystalline powder, with strong hygroscopicity, and is soluble in water and ethanol. It has a special pleasant sour taste. Malic acid is mainly used in the food and pharmaceutical industries.
Malic acid has three isomers: L-malic acid, D-malic acid and DL-malic acid. The naturally occurring malic acid is always in the L form and is found in almost all fruits, with the highest content in stone fruits. Malic acid is a colorless needle-like crystal or white crystalline powder, odorless, with a stimulating and refreshing sour taste.
The most common form is the levorotatory form, L-oxalic acid, which is present in the juice of immature plums, apples and grapes.
