Aspartame is a food additive that has been reported to be associated with various adverse reactions. Its chemical name is potassium acetylsulfamate, also known as AK sugar. It appears as a white crystalline powder. It is an organic synthetic salt with a taste similar to sugar cane and is soluble in water but slightly soluble in alcohol. Aspartame has stable chemical properties and is unlikely to undergo decomposition or failure; it does not participate in body metabolism, does not provide energy; it has a high sweetness level and is inexpensive; it has no cariogenicity; it is stable to heat and acid, and is currently the fourth-generation synthetic sweetener in the world. When mixed with other sweeteners, it can produce a strong synergistic effect. At a normal concentration, it can increase sweetness by 20% to 40%.

Products Application
As a non-nutritive sweetener, aspartame remains essentially unchanged in concentration within the normal pH range when used in food and beverages. It can be mixed with other sweeteners, especially when combined with aspartame and cyclamic acid salts, achieving better results. It can be widely used in various foods such as solid drinks, pickled vegetables, preserved fruits, gummy candies, table sweeteners, and other foods containing sweeteners. It has a strong sweet taste, with a sweetness approximately 200 times that of sucrose, and its flavor properties are similar to saccharin. At high concentrations, it has a bitter taste. According to the "Food Additive Use Standard for Food Safety National Standards" (GB 2760-90) in China, the maximum usage amount is 0.3g/kg. It can be used as a sweetener in food, medicine, and other fields.
The regulations and standards of international organizations, countries, and regions such as the Codex Alimentarius Commission (CAC), the European Union, the United States, Japan, Australia, New Zealand, and Canada all allow aspartame to be used as a sweetener in corresponding foods. For example, in some countries in Europe and America, aspartame can be used in sweet products. The "Food Additive Use Standard for Food Safety National Standards" (GB 2760-2014) in China also stipulates that aspartame can be used in ready-to-eat flavored foods or their pre-prepared products (excluding ice cream and flavored fermented milk) (only for milk-based sweet dessert cans), frozen drinks (except edible ice), fruit canned foods, jam, preserved vegetables, processed edible fungi and algae, mixed grain canned foods, black sesame paste, cereal sweet dessert cans, baked foods, beverages (except packaged drinking water), jelly, table sweeteners, seasonings, soy sauce, candies, and gelatin candies, but it is not allowed to be used in cold confectionery products. China has also formulated corresponding quality specification requirements for aspartame, namely "Food Additive Acetosulfame Potassium" (GB 25540-2010). In addition, according to the provisions of "General Rules for Prepackaged Food Labeling" (GB 7718), as long as aspartame (including using compound sweeteners containing aspartame) is used in food, it must be labeled on the food label.
