Sodium pyrophosphate, an inorganic compound with the chemical formula Na4P2O7, is a white crystalline powder. It readily absorbs moisture in the air and deliquesces. It is soluble in water but insoluble in ethanol and other organic solvents. It has a strong complexing ability with metal ions such as Cu2+, Fe3+, and Mn2+. Its aqueous solution remains stable below 70°C but hydrolyzes to disodium hydrogen phosphate when boiled.

White powder or crystals. Relative density 2.534, melting point 980℃. Colorless transparent crystals or white powder crystals. Easily soluble in water. At 20℃, the solubility of 100g water is 6.23g. The aqueous solution is alkaline; insoluble in alcohols. The aqueous solution remains stable below 70℃, but decomposes into disodium hydrogen phosphate when boiled. Easily absorbs moisture in the air and deliquesces. Can form complexes with alkaline earth metal ions; forms white pyrophosphate silver when encountering Ag+.
Can undergo complexation reactions with metal ions. The pH value of its 1% aqueous solution is 10.0 - 10.2. It has the common properties of polymeric phosphates, such as emulsifying property, dispersing property, preventing fat oxidation, improving protein adhesion, and also has the effect of inhibiting the oxidation and fermentation of food at high pH values.

The paper industry uses it for the bleaching of paper and plant fibers. The dyeing and printing industry uses it as an auxiliary agent during dyeing and fine bleaching. The cosmetics industry uses it as a toothpaste additive, which can form a colloid with calcium hydrogen phosphate and play a stabilizing role. It can also be used in the production of synthetic detergents and hair shampoo products. In water treatment, it is used as a softening agent. In mechanical processing, it is used as a rust remover. In chemical production, it is used as a dispersant and emulsifier. It can also be used in water treatment agents, oil drilling, etc. In the food industry, it is used as a quality improver, emulsifier, buffer, chelating agent, etc.
Sodium pyrophosphate has the function of softening water, and it can also dissolve insoluble salts of calcium and magnesium, such as insoluble calcium soap or other metal soaps formed by dirt on clothes fibers. It can dissolve these substances again to enhance the cleaning ability. In addition, sodium pyrophosphate has an anti-flocculation effect, causing the oil to emulsify, which is called the gelation property. It can also further reduce the surface tension and interfacial tension of surfactant solutions, playing a detergent-assisting role.
