Lemon Yellow (INS 102, E102) is a water-soluble synthetic food coloring with a vivid lemon-yellow color. It is widely used in the fields of food, beverages, medicines and cosmetics. This product complies with the national standard GB 1886.6-2016 and the international food additive regulations (FDA 21 CFR 74.1705, EU E102), and possesses excellent light resistance, heat resistance and pH stability, providing a long-lasting and bright visual appeal for the product.

Lemon Yellow (Tar trazine or Lemon yellow), also known as malachite yellow, acidic pale yellow, food yellow No. 4, is an acidic synthetic colorant, a water-soluble azo-type colorant. Its molecular formula is C16H9N4Na3O9S2, with a relative molecular mass of 534.37. It is a yellow or orange-yellow powder, odorless, soluble in water, soluble in glycerol and propylene glycol, slightly soluble in ethanol, and insoluble in fats. It has good acid resistance, heat resistance, salt resistance, light resistance, and poor oxidation resistance. It is slightly red when exposed to alkali, and fades when reduced. Lemon Yellow can be prepared by the condensation method and the heavy ammoniation-azo method. It can be used for coloring beverages, candies, pastries, jelly, ice cream, medicines and other foods to improve the appearance of the food. The maximum dosage in pharmaceuticals is 0.1g/kg, and the maximum allowable daily intake as set by WHO is 7.5mg/kg. It is also used as a coloring agent in medicine and daily cosmetics, dyeing wool and silk, and manufacturing pigments.
Long-term animal experiments on lemon yellow have shown that it is highly safe and is widely permitted for use by various countries. It is considered the least toxic synthetic pigment and has an ADI of 0-7.5 mg/kg. A small amount of lemon yellow will be digested and excreted by the human body, but it has no nutritional value. Long-term consumption of food with excessive lemon yellow may have certain impacts on human health. The "Food Safety National Standard - Use Standard of Food Additives" (GB 2760-2024) stipulates that lemon yellow is not allowed to be used in dried vegetable products. The allergic symptoms of lemon yellow include rash, asthma and vascular edema, and it has potential life-threatening risks.
