Sodium bicarbonate is a white powder or opaque monoclinic fine crystals. It has no odor, a slightly salty taste and a cool nature. It is soluble in water and glycerol, and slightly soluble in ethanol (some sources say insoluble). The solubility in water is 7.8 g (18 ℃) and 16.0 g (60 ℃) at 18 ℃. The density is 2.20 g/cm³ and the specific gravity is 2.208. The refractive index is approximately 1.5 (α: 1.465; β: 1.498; γ: 1.504), the standard entropy is 24.4 J/(mol·K), the heat of formation is 229.3 kJ/mol, the heat of dissolution is 4.33 kJ/mol, and the specific heat capacity (Cp) at 22 ℃ is 20.89 J/(mol·℃).

Products Application

Laboratory use
Sodium bicarbonate can be used as an analytical reagent and is also employed in inorganic synthesis [5]. It can be used to prepare sodium carbonate-bicarbonate buffer solutions. When a small amount of acid or base is added, the hydrogen ion concentration will not change significantly, maintaining the pH value of the system relatively stable [24].
Industrial use
Sodium bicarbonate can be used in the production of acid-base fire extinguishers and foam fire extinguishers. In the rubber industry, it can be used in the production of rubber and sponge. In the metallurgical industry, it can be used as a fluxing agent for casting steel ingots. In the mechanical industry, it can be used as a molding aid for cast steel (sand casting) molds. In the dyeing industry, it can be used as a fixation agent for dyeing, an acid-base buffer, and a post-treatment agent for fabric dyeing and finishing; adding baking soda during dyeing can prevent color bleeding on the spindles and can also be used as a detergent for wool.
Food processing use
In food processing, sodium bicarbonate is the most widely used leavening agent, used in the production of biscuits, bread, etc. However, after its use, sodium carbonate will remain, and excessive use will cause the food to have excessive alkalinity, resulting in a deterioration of flavor and a yellowish-brown color. It is an agent for generating carbon dioxide in carbonated beverages; it can be combined with alum to form alkaline baking powder, or with soda ash to become civilian soda ash; it can also be used as a butter preservative. In vegetable processing, it can be used as a color stabilizer for fruits and vegetables. When adding about 0.1% to 0.2% of sodium bicarbonate when washing fruits and vegetables, the color can be stabilized. When sodium bicarbonate is used as a processing agent for fruits and vegetables, by boiling and soaking the fruits and vegetables, the pH value can be increased, the water-holding capacity of proteins can be improved, the softening of food tissue cells can be promoted, and the astringent components can be dissolved. In addition, it has a deodorizing effect on goat milk and can be used at a concentration of 0.001% to 0.002%. It is prohibited for use in gastric lavage during the washing of strong acid poisoning, and large injections, renal insufficiency or long-term use can cause arrhythmia, muscle spasms, pain, abnormal fatigue and weakness, slow breathing, bad breath in the mouth, frequent urination, urgent urination, persistent headache, loss of appetite, nausea, and vomiting.
