Sodium D-isoascorbate is a white to yellowish-white crystalline or powder form, odorless, with a slightly salty taste. It is quite stable in the dry state in the air, but it is prone to oxidation in water solutions when exposed to air, metals, heat, or light. It is easily soluble in water, with a solubility of 55 g/100 mL. The pH of a 1% aqueous solution is 7.4, and it is almost insoluble in ethanol. The antioxidant property of sodium D-isoascorbate is the same as that of isocitric acid.
Sodium D-isoascorbate is a new type of biological food antioxidant, preservative, and color enhancer. Food Industry 1.
