Cyclodextrin (β-cyclodextrin, abbreviated as β-CD) is a product formed by the acid hydrolysis and cyclization of starch. It can encapsulate various compound molecules, enhancing the stability of the encapsulated substances to light and heat, as well as oxygen, and changing the physical and chemical properties of the encapsulated substances. β-cyclodextrin is also known as ring maltose, ring heptadextrin, or β-CD. It is a cyclic substance composed of 7 glucose residues linked by β-1,4-glycosidic bonds, with a relative molecular mass of 1135. This product can form complex compounds with various substances, making them stable, solubilizing, sustained-release, emulsifying, antioxidant, anti-decomposition, heat-preserving, moisture-proof, and having the functions of masking odors, etc. It is a new type of molecular encapsulation material.

Cyclodextrin (β-cyclodextrin, abbreviated as β-CD) is a product formed by the acid hydrolysis and cyclization of starch. It can encapsulate various compound molecules, enhancing the stability of the encapsulated substances to light and heat, and changing the physical and chemical properties of the encapsulated substances. β-cyclodextrin has the advantages of high selectivity, non-toxicity, edible nature, non-hygroscopicity, excellent chemical stability, and ease of separation. It can adsorb non-polar substances such as cholesterol, as its inner diameter can just accommodate one cholesterol molecule. The principle mainly lies in the slight interfacial activity of cholesterol, which will aggregate at the oil-water interface, facilitating the encapsulation of β-cyclodextrin in the aqueous phase, forming a water-insoluble β-cyclodextrin-cholesterol complex. Through centrifugation, it can be separated from the food. The removal rate of cholesterol increases with the increase of β-cyclodextrin concentration. If too much β-cyclodextrin is added, due to the competition between molecules, the removal rate of cholesterol will decrease. Using more β-cyclodextrin will also reduce the yield of the food and leave more β-cyclodextrin. Application in the food industry. Cyclodextrin has functions such as protecting some substances from oxidation, light, heat, volatilization, and solidification. Therefore, it can be used as a multifunctional food additive.
