Carmine Flavor Colorant

Carmine, also known as Edible Red No. 102 (Japan), Edible Red No. 7, Lilin Red 4R, Bright Scarlet, is a water-soluble azo-based colorant. Its chemical name is 1-(4'-sulfonic acid-1'-naphthalenazo)-2-naphthol-6,8-disulfonic acid tri sodium salt. It is an isomer of amaranth,with the molecular formula of C20H11O10N2S3Na3. Carmine is the most widely used and largest quantity-used single azo-based artificial synthetic pigment in China. In recent years, there have been reports indicating that Carmine and Sudan Red No. 1, which is banned in the EU standards, belong to azo-based pigments. Azo compounds can be metabolized in the body to form mutagenic precursor compounds - aromatic amine compounds. The applicable scope and usage amount stipulated in China are the same as those of amaranth.

Products Description

 

Carmine is a uniform granular or powder form of red to deep red color, odorless. It has good resistance to light and acid, strong heat resistance (105℃), poor resistance to reductants; poor resistance to bacteria. It dissolves in water, forming a red solution; it dissolves in glycerol, is slightly soluble in alcohol, and insoluble in oils. Its maximum absorption wavelength is 508nm ± 2nm. It is stable to citric acid and tartaric acid; it turns brown when exposed to alkali. Its coloring performance is similar to amaranth.
Carmine appears as red to deep red powder in appearance, soluble in water and glycerol, insoluble in ethanol, and insoluble in oils.

Products Application

 

Carmine, as a food colorant, can be used to color foods such as fruit juices, mixed drinks, carbonated beverages, candies, pastries, ice cream, yogurt, etc., but not in meat products like dried meat or sausage products, aquatic products, etc. This is mainly to prevent some unscrupulous individuals from using the pigment to cover up the appearance of bad raw materials such as spoiled meat and deceive consumers.
According to the Chinese food safety national standard "Food Additives: Carmine" (GB 1886.220-2016) [12]: The usage range and maximum usage amount of Carmine are the same as those of Amaranth. It can also be used for candy coloring, soy milk beverages, maximum usage amount 0.1g/kg; red sausage casings, maximum usage amount 0.025g/kg, residue 0.01g/kg.
