It is used as a buffer, chelating agent, stabilizer, antioxidant, emulsifier, flavoring agent, etc. in the food industry. Potassium citrate can also be used in milk and dairy products, jellies, jams, meat, canned gelatin snacks, cheese emulsification, preservation of citrus fruits, etc. In the pharmaceutical industry, it is used for hypokalemia and potassium deficiency and to alkalize urine. The product standard of potassium citrate (GB14889-94) includes the following indicators: 1. Potassium citrate (calculated on dry basis) ≥ 99.0% 2. Alkalinity: 5% aqueous solution is alkaline to litmus, but after adding 0.2 mL of 0.1 mol/L sulfuric acid to 10 mL of this solution and adding one drop of phenolphthalein reagent, no pink color appears 3. Arsenic (calculated as As) ≤ 0.0003% 4. Heavy metals (calculated as Pb) ≤ 0.001% 5. Loss on drying (180℃, 4h) 3.0% - 6.0%

 

Products Dosage

 

Usage instructions: 1. It is used to adjust the acidity of jams and jellies to maintain their pH between 2.8 and 3.5. The specific dosage varies depending on the different foods, ranging from 0.5 to 5g/kg. 2. As a stabilizer, it is used in sweetened condensed milk, sweetened cream, and light cream. The dosage is 2g/kg (used alone) or 3g/kg (used in combination with other stabilizers, based on the dry substance); for powdered milk and dehydrated cream, the dosage is 5g/kg (Chemicalbook) (used alone or in combination with other stabilizers, based on the dry substance); for processed cheese, the dosage is 40g/kg (used alone or in combination with other stabilizers, based on the dry substance). Dosage: It can be used in appropriate amounts for various foods as per production needs. For jams and jellies, 0.5 to 5g/kg; for sweetened condensed milk, sweetened cream, and light cream, 2 to 3g/kg; for powdered milk and dehydrated cream, 5g/kg; for processed cheese, 40g/kg.
