Pineapple Flavor

Pineapple is also known as "pineapple flower". When it is freshly picked and green, it does not have any fragrance. In the early days, the main ingredients used to imitate the pineapple flavor were propyl caproate, ethyl butyrate and ethyl pentanoate. These were combined with other raw materials, but their flavor was not as natural as the original. The characteristic of pineapple aroma is ester compounds, especially methyl esters and ethyl esters. In recent years, some materials have mentioned the useful raw materials for imitating pineapple aroma, and they believe that methyl caproate, hexyl acetate, 3-octenyl methyl ester, 3-methoxypropyl methyl ester, 3-methoxypropyl ethyl ester are both natural flavor components contained in pineapple and important raw materials for imitating pineapple aroma. 2,5-Dimethyl-4-hydroxy-3(2H)-furanone has a burnt-sweet aroma and is a flavor component of pineapple, and it can be used, but note that it is an unstable compound. The ester compounds present in pineapple will gradually hydrolyze during fruit storage. Therefore, the volatile substances distilled from pineapples do not have the aroma of pineapple. There are no natural flavoring agents derived from pineapple for preparing pineapple essence.
