The strawberry belongs to the Rosaceae family of plants. There are both wild and cultivated varieties. The wild strawberries have smaller fruits, darker color and stronger aroma compared to the cultivated varieties. In various European and American countries, strawberries are a widely beloved type of berry. They are not only consumed as fresh fruits, but also used in the food industry to produce jams, juices and other foods, and in the fragrance and flavor industry, they are made into natural strawberry flavorings. In recent years, the cultivation and consumption of strawberries in China have also been gradually developing.
The aroma components of strawberry essence (%):
Green aroma 15-40; Vanilla-caramel aroma 20-40; Flower aroma 1-5; Sour aroma 3-15; Milk aroma 3-10; Buttermilk aroma 1-5; Fruit aroma 10-50.
The aroma of strawberries consists of three types of fragrances: green, sweet, and sour. The green and sweet fragrances are the dominant ones. In traditional blending of strawberry essence, 3-methyl-3-phenylglycidyl acetate (strawberry aldehyde) and 3-phenylglycidyl acetate (strawberry ester) with similar strawberry aroma are usually used as the main fragrances. Gekacinocarboxylic acid methyl ester, acetetyl ethyl acetate, ethyl benzoate, jasmine oil, violet leaf oil, cinnamic acid methyl ester, cinnamic acid ethyl ester, rose alcohol, phenylethanol, camphene, ethyl camphorol, vanillin, and eugenol are used to impart the green aroma. The sweet aroma is composed of acetic acid, butyric acid, isobutyric acid, etc. The sour aroma is composed of acetic acid, butyric acid, isobutyric acid, etc. Additionally, ester-type fragrances with fruity aroma are added.
