Calcium propionate is a safe and reliable food and feed preservative approved by the World Health Organization (WHO) and the Food and Agriculture Organization of the United Nations (FAO). Like other fats, calcium propionate can be metabolized by humans and animals and provide them with essential calcium. This advantage is unmatched by other preservatives and is considered GRAS. Molecular weight 186.22, white lightweight flaky crystals, or white particles or powder. It has a slight special smell and is prone to deliquescence in humid air. The anhydrous salt is colorless monoclinic plate-shaped crystals. It is easily soluble in water and slightly soluble in ethanol. It has broad antibacterial effects against molds, yeasts, and bacteria, and can serve as a preservative in bread and pastries, with lower pH values resulting in higher preservative efficacy. Calcium propionate has almost no toxicity to the human body. It is used as a preservative in cosmetics, with a maximum allowable concentration of 2% (based on propionic acid). It should be stored in a dry and cool warehouse, and during storage and transportation, it should be protected from rain and moisture. It is produced from propionic acid by neutralizing with calcium hydroxide.

Calcium propionate is an acid-type food preservative. Under acidic conditions, it produces free propionic acid, which has antibacterial properties. Its antibacterial effect is influenced by the environmental pH value. The inhibitory effect on molds is the best at a pH value of 5.0; at a pH value of 6.0, the antibacterial ability significantly decreases, with the minimum inhibitory concentration being 0.01%. In acidic media (such as starch, protein-containing substances and oil substances), it has a strong inhibitory effect on various molds, Gram-negative bacilli or aerobic spore-forming bacteria. It can also inhibit the production of aflatoxin and is harmless to yeast and animals, and has no toxic side effects. It is a new, safe and efficient food and feed preservative for preventing mold growth.
As a preservative for feed, it is mainly used in protein feed, fish bait feed, and complete feed for aquatic animals. It is an ideal preservative for preventing mold growth in various feed processing enterprises, research institutions and other animal feed. In medicine, propionate salts can be made into powder, solution and ointment to treat diseases caused by parasitic molds on the skin.

 

Calcium propionate is a white crystalline substance or white powder or granules, odorless or slightly having the smell of propionic acid. The calcium propionate used as a food additive is a monohydrate salt, stable to water and heat, hygroscopic, soluble in water (39.9g/100mL at 20℃), insoluble in ethanol and ether. When the same amount of dilute sulfuric acid is added to a 10% calcium propionate aqueous solution and heated, it can release the special smell of propionic acid. Calcium propionate is alkaline, and the pH value of its 10% aqueous solution is 8-10.
The preservative property of calcium propionate is the same as that of sodium propionate. It forms propionic acid in an acidic medium to exert antibacterial effects. The effective dose of calcium propionate to inhibit mold is smaller than that of sodium propionate, but it can reduce the effect of chemical leavening agents. Therefore, sodium propionate is commonly used. However, its advantage is that calcium propionate can be used in pastries, bread and cheese to supplement calcium in the diet. Calcium propionate can inhibit the reproduction of Bacillus subtilis during dough fermentation. The minimum inhibitory mass fraction is 0.01% at a pH of 5.0, 0.188% at a pH of 5.8, and the optimal pH should be lower than 5.5.

Used as a preservative for bread, pastries and cheese, as well as a mold inhibitor for feed. As a food preservative, the acetate salts, calcium acetate are mainly used for bread because sodium acetate raises the pH value of the bread, delaying the fermentation of the dough; sodium acetate is more commonly used in pastries because the leavening of pastries uses synthetic leavening agents and there are no yeast development problems caused by pH value increase. As a feed preservative, the effect of sodium acetate is better than that of calcium acetate. However, calcium acetate is more stable than sodium acetate. In medicine, acetate salts can be made into powders, solutions and ointments to treat skin parasitic fungi-related diseases. The ointment (liquid) contains 12.3% sodium acetate, and the powder contains 15% calcium acetate.
